Bioactive metabolites and enzymes of edible higher fungi; current projects deal with the biotransformation of volatile flavours and non-volatile pigments, the isolation of fungal enzymes, such as lipases, peptidases, laccases, peroxidases and dioxygenases, isoelectric foaming, heterologous expression of fungal enzymes and with the biotechnology of basidiomycetes in various types of bioreactors.
